After School Cookies

These are really easy to make by Lisa Snowdon and are a great afternoon snack. With bananas high in potassium and the nutrient packed dates, will keep everyone going until dinner!


1 ½ cups rolled oats

2 ripe bananas

1 tablespoon coconut oil

4 tablespoons maple syrup

4 tablespoons peanut or almond butter

6 soft Medjool Dates (chopped)



Preheat oven to 180°

In a bowl mash the bananas, add the rest of the ingredients,

Mix well to cover the oats, drop spoonfuls of the mixture on to a lined cookie sheet,

Press slightly to flatten, bake for approximately 20 minutes.
