Blueberry Apple Crumble

I love eating this warm, but if you want to cut nice slices it needs to be cooled down. The slow release energy from the oats and buckwheat will keep your blood sugar balanced, the cinnamon too works on balancing blood sugar levels. The omega 3 in the walnuts are great for brain health supporting you through d –cluttering.


1 ½ cups rolled oats

½ cup buckwheat flour

2 tablespoons coconut sugar

1 teaspoon cinnamon

½ cup chopped walnuts

100g butter (cold)


4 Pink Lady Apples cubed

350g blueberries

2 tablespoons potato flour

½ teaspoon cinnamon

½ lemon squeezed


Preheat the oven to 180 degrees, combine the base ingredients in one bowl and the filling ingredients in another bowl adding the lemon last. In a "9 X 9” baking tin, place baking parchment and press half the base mixture down, spreading throughout the baking tin, place the filling mixture next throughout the baking tin and then sprinkle the rest of the base mixture over the fruit. Place in the oven for 1 hour.
