Breakfast Lecso’
I call this recipe a multi vitamin! From the eggs, to the nutritious vegetables and seasonings, and turmeric as an anti-inflammatory to ease winter ailments, this is a great way to start your day.
1 tablespoon olive oil
½ red onion
½ red paprika
½ celery stick
½ carton water cress
1 handful coriander
2 salad tomatoes
¼ teaspoon turmeric
tiny shake cumin
small shake black pepper
nice shake Herbamere (A. Vogel)
3 eggs
Method:
Chop the first 3 three vegetables on the list,
On a medium flame heat a medium size frying pan,
Add olive oil and chopped vegetables, sauté until slightly tender,
Chop the tomatoes and green leaves and add to the pan for about 5 minutes, until the surface is dry
Sprinkle on the spices and mix well,
In a small bowl beat the eggs and add it to the Lecho.
Delicious on toast or Ryvita!
