Breakfast Muffins

These make a great ready to go breakfast for the family – buckwheat is a fantastic alternative to wheat, and cinnamon and nutmeg are excellent blood sugar balancing spices. Walnuts are packed with omega 3, and the oats and bananas will sustain energy levels!

1 cup walnuts

1 cup rolled oats

2/3 cup buckwheat flour

3 tablespoons potato flour

1 ½ teaspoons baking powder

½ teaspoon bicarbonate of soda

1 teaspoon turmeric

½ teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon sea salt

A pinch of black pepper

Add sugar if desired

3 eggs

2/3 cup soya milk

1/3 cup olive oil

2 ripe bananas (mashed)

5 soft Medjool Dates (chopped)

 

Method:

Preheat oven at 170°

Blend the walnuts and oats, combine with the rest of the dry ingredients. Beat the eggs and add together with the rest of the ingredients to the dry mixture. Mix well and divide into muffin cases. Top with frozen blueberries or chocolate chips and bake for about 20 minutes.
