Beetroots are fantastic for liver health and detoxification, the use of ground almonds instead of conventional flour is also brilliant for balancing blood sugar levels!
250g ready cooked beetroots cubed
200g dark chocolate 85% cocoa
2 tablespoons coconut oil
1 teaspoon vanilla extract
½ cup unrefined sugar
½ cup ground almonds
Preheat oven to 180 degrees, melt the chocolate in a double boiler, in a bowl place the beetroots, coconut oil, vanilla extract, and melted chocolate and blend with a hand blender.
In an electric mixer beat the eggs and sugar until fluffy, reduce the speed to mix at the lowest speed and add the ground almonds and chocolate mixture.
Pour into cup cases, until almost full and place in the oven for 20 – 25 minutes.
