These non-bake biscuits are great to wrap in cling film and keep in the freezer for those desperate moments , with slow release energy from the oats, and protein it’s a sure win!
¼ cup protein powder
½ cup honey
2 tablespoons plant milk
2 tablespoons coconut oil
3 tablespoons peanut butter
¼ teaspoon salt
2 cups rolled oats
25g mint chocolate
In a pan on a medium heat melt protein powder and honey, reduce the heat and add coconut oil and milk, mixing very well and then adding the peanut butter and salt to melt. Remove from the heat once the mixture is well combined and add the oats covering the oats completely.
Whilst still warm make 1 inch balls and press them slightly when placing them onto a tray covered in parchment paper.
Melt the chocolate by placing it into a white polythene bag in a cup of hot water, keeping the top of the bag hanging out. Remove the bag once the chocolate is melted and cut a tiny whole at the corner of the bag to allow the chocolate to be drizzled over the biscuits and place them in the fridge to set.
