Sauteed Veggies

This recipe can be used as a side dish or on its own and is high in fibre and very nutritious.

1 large onion diced

2 sticks celery sliced

1 aubergine diced

1 courgette diced

1 yellow paprika diced

2 tomatoes diced

2 tablespoons of olive oil

1 teaspoon Herbamere salt

½ teaspoon black pepper

Any seasoning you like such as turmeric or paprika powder


Heat a large frying pan on a medium heat, place oil and onions, sautee until translucent about 5 minutes, mixing occasionally.  Then add all the rest of the vegetables if it gets to dry add 1/2 cup of water, mixing occasionally for about 30 minutes then add the seasoning mixing for another 5 minutes.
