Sweet potatoes are a good source of stress supporting nutrients such as B vitamins and Vitamin C, the cinnamon and nutmeg are good to support blood sugar balance.
1 narrow long sweet potato
1 tablespoon olive or coconut oil
1 teaspoon sea salt
½ teaspoon cinnamon powder
Sprinkle nutmeg powder
Preheat the oven at 180 degree, peel the sweet potato, cut it through horizontally and then cut thin slices down. Place it in a bowl, add the rest of the ingredients and mix well. Prepare a baking tray with a baking sheet, pour the mixture onto the sheet and spread it out evenly. Bake it in the oven for 45 minutes and then reduce to 120 degrees if you prefer the sweet potatoes more dried out, for as long as you like.
