These grilled vegetables are a good source of protein, Vitamin C, high in dietary fibre, and being grilled they will make you feel good and keep you satisfied for longer. Great to be eaten hot, but also delicious cold with Hot Avocado Crème’ (recipe in the Nurture Yourself booklet)
2 small aubergines
3 small courgettes
3 red peppers cut in quarters
Wash and slice the vegetables about ½ cm thick, horizontally.
Prepare the Lemon Balm Marinade and smear the vegetables with it. If you have time allow it to sit at least half an hour, for great flavour leave to sit for 2 hours.
Preheat the oven on grill at 200 degrees.
Place on rack in the oven for 6 - 8 minutes, depending on your oven, then turn over for another 6 minutes, for even look.
