Tri Coloured Turkey Dish

 

This can be used as a one pot dinner; the turkey is high in protein and full of amino acids, especially tryptophan to boost your melatonin, and a good source of selenium.

1lb Turkey leg cubed

2 tablespoons olive oil

1 large onion diced

1 red paprika diced

1 green paprika diced

1 yellow paprika diced

½ teaspoon black pepper

1 tablespoon Herbamare Salt

Water to cover turkey

Method:

 In a pot heat the olive oil on a medium to low heat, and add the onions to become translucent, stirring occasionally, after about 5 minutes add the 3 colours of paprika for about 5 minutes add a 1/4 cup water if it’s too dry. Then add the turkey covering the pot until the colour of the poultry has changed about another 5 minutes. Add the seasoning, mix and fill the pot with water to cover the turkey and bring to a boil on a higher flame, then lower the flame. Allow it to stew for about 2 hours or until the texture is to your liking, add water if needed to keep the turkey covered in water. It’s nice to boil some basmati rice in the pot of turkey 15 minutes before eating!
